I'm ready for some new variety and am looking for recipes whether for breakfast, lunch, snacks or dinner. Any input would be great! Here's one that I love. (This one's for you, Nicole.)
Applesauce Bread:
1/2 stick butter or margarine 1 tsp cinnamon
1/4 cup solid shortening 1 tsp allspice
1 cup (minus 3 Tbs) sugar 1 tsp nutmeg
1 large egg 1/4 tsp cloves
1 cup applesauce 1 tsp salt
1/2 cup chopped walnuts or pecans (optional) 1 tsp baking soda
1 3/4 cup sifted flour
Cream together butter, shortening and sugar. Add egg and beat thoroughly. Beat in applesauce. Sift together dry ingredients and add to applesauce mixture. Bake at 350 for 1 hour in a greased pan. Yum, yum! This was a family recipe from my dear roommate Shauna. Thanks!

that bread was so yummy. i'm going to have to write down the recipe. i have lots of recipes but not sure which ones you would like. none are all that fabulous but i did make some good zucchini bread the other day.
Here is a quick and easy one...
Chicken Salsa Burritos
1 large chicken breast
2 c. thick and chunky salsa
1 frozen box of spinach (9oz.)
1 1/2 c. shredded cheddar cheese
1 pkg of flour tortillas
boil and shred chicken breast. defrost and drain spinach in microwave. Combine all the ingredients in a pot on the stove and heat until cheese is melted and mixture is warm. Fill tortillas with filling and serve warm. I have also added a can of black beans washed and drained along with some corn to make it go farther.
Hope that you like it. Eric would request it every week if I would make it for him. I will have to give your applesauce bread a try.
Old-fashioned Sugar Cookies
3 c all purpose flour
1 c soft butter or margarine
1 c sugar
1 egg, slightly beaten
(or 1/4 c applesauce)
1 1/2 tsp baking powder
3 Tbsp cream (or milk)
1/2 tsp salt
1 tsp vanilla
Preheat oven to 400 F. Sift flour with sugar, baking powder, and salt in a mixing bowl. Cut in butter, using an electric mixer or pastry blender, until particles are fine. Add egg (applesauce), cream (milk), and vanilla. Blend thoroughly. If desired, chill dough for easier handling.
Roll out on floured surface, one-third at a time, to 1/8-inch thickness. Cut into desired shapes. Place on ungreased cookie sheets. Bake at 400 F for 5 to 8 minutes, until golden.
(I used applesauce because I have a friend who is allergic to eggs and I like the applesauce better because it makes the cookies softer and fluffier.)

Here's a fast dinner one.
Frito Casserole
One small bag of Fritos (not individual size, but not full size either. I don't remember how many oz. sorry)
One can of chili w/o beans
One can of Kidney beans
One can of corn
1 1/2 C shredded cheddar cheese
Combine all ingredients in a 9x13 and bake at 350 for 15-20 min until cheese is melted. Happy cooking!!!!
